Apple Crumble Muffins
So delicious it’s hard just to eat one at a time, absolutely perfect with a cup of tea.
These Apple Crumble Muffins are one of my customer favourites, waiting for the end of summer when I can make them with local freshly picked Bramely apples. The muffins come out beautifully soft with a little spice with a delightful crunchy cinnamon flavour topping.
Once the batter is mixed you have to move quickly to get it into the muffin cases and get the crumble topping on, so the cupcake tray goes into the oven before the rise from the bicarbonate of soda is lost, as it starts to work as soon as it hits any liquid.
I’ve found that the large cupcake/ice cream scoops levelled will make 12 equal scoops. Cupcake/ice cream scoops
