Gluten Free & Dairy Free Sticky Toffee Date Slice
It may be Gluten and Dairy Free but you’d never know with its light moist texture. Often Gluten Free bakes can be very dry, just by the nature of the flour used but this Sticky Toffee date slice is far from it.
The key to getting beautifully soft dates, is to soak them in boiling water. Once they’re soaking it’s a case of making a sponge mix with soft brown sugar rather than caster to add to the toffee flavour with the addiction of bicarbonate of soda to increase the rise. This is because not only do you put in the soaked, chopped dates but also all of the water they were soaked in. Once you do this it looks absolutely awful, split and running with lumpy date through it, but once it bakes it’s amazing .
